Caribbean Special with Chef Clive

This August, SOS had the pleasure of hosting a Caribbean-style cooking class featuring Chef Clive from One Love Food Truck! Chef Clive was joined by Chef Shavon to demonstrate how to prepare an ahi tuna appetizer and stuffed airline chicken.


The ahi tuna appetizer had a unique Caribbean twist—a jerk seasoning crust that elevated the mild flavor of the raw fish. The tuna was paired with a mango seaweed salad, and rice, and topped with a wasabi crema to create the perfect bite that makes you say, “Oh snap".


For the entree, Chef Clive demonstrated how to make a chicken “fly” by cutting a small pocket into the chicken breast and stuffing it, a method called airline chicken. The chicken was stuffed with rice, two types of cheese, Monterey jack and parmesan, and baked until cooked through and golden brown. Attendees were delighted with the presentation, blend of flavors, and cohesiveness of the dish.


Both Chef Clive and Chef Shavon shared their personal and professional background, including their love for making food and highlighting true Caribbean flavors and dishes. After working as a chef at the Stock Island Yacht Club, Chef Clive turned his dreams into a reality and opened his own food truck, One Love. In addition to One Love, Chef Clive and Chef Shavon offer private catering services.
